Pro: The cheese is local! Pro: The cheese is fresh! Con: As someone obsessed with cheese, I don't like the bread-to-cheese ratio (more cheese please!). Con: sandwiches are pre-made, no adjustments.

Where's the cheese? For $7 there should be cheese dripping out the sides not a single slice of cheese lost somewhere between two huge slices of bread.
My grilled cheddar/guac/jalapeño sandwich had neither guac, jalapeños, nor melted cheese. They were very kind about refunding for my unmelted cheese & green chili sandwich at least.
The goat cheese doesn't melt as nicely as cow cheese.
