The food was outstanding. We had the octopus appetizer (perfection), for dinner I had the Duck Bolognese, my husband had the veal (great). Pair the KY bourbon pie with the Madeira...it is beautiful!
The bison burger is awesome; the crispy rosemary parmesan fries are even better. Love that they split it for us!
Don't skip the blackberry Pop-Tart with chicken liver pate. Just trust me on this one.

Everything is good at Proof, last time we was there, we had a steak and diver scallop. The steak I had was perfect every bit had so much flavor. The diver scallop was a nice size and very fresh!

The charred Octupus was disappointing. It was rubbery , though with flavor. I love Octupus and have had it all over the world. The Octupus in their sister resto in Cincy is soo much better.

Not much of a brunch scene, but the eggs benedict w/ grits was delicious.
Must go when in Louisville. Excellent service, terrific dinner. And a great bar with many bourbons. Enjoy your drink while you walk through the art gallery. A seriously good time.
