    The rice is warm, and the sushi is achingly fresh, though selections are a bit more straightforward than other high-end places. To get beyond the set menu with special items, politely ask the chef.

    No cell phones. Come hungry. Chef Shinji Murata runs a tight ship, and the discipline extends to his ingredient selections — only the best blue crab, baby tuna, escolar, and salmon skin make the cut.

    Let the chef decide for you. He's strict but it is so fresh and completely worth being scared by him! Oh and make sure to power down phones or you'll be in the sushi dog house.

    Sit at the sushi bar. The chef keeps serving you the most amazing sushi of his choice until you say stop. Sooo good!
