Jen Shin: love the chipotle-style concept for pho! lots of toppings to choose from and even different broths. fried spring rolls are also delicious.
John Khuu: Think Chipotle ordering style but Vietnamese pho. In terms of quality, they keep it authentic and open up a variety of ingredients and sauces for a fair price. Give it a shot, I recommend it.
John Khuu: Choose your dish, your meats (more cost extra but worth), pick your veggies and broth then you're good to go. The beef broth is kind of bland but def a quality quick go-to Vietnamese place.

Jennifer Straub: I have yet to find a better sushi place in Chicago. The rolls are reasonably priced and delicious. If you're feeling up for it, the Miami roll is my favorite. The place is BYOB so bring a bottle!
