This brewery made a commitment to make premium sake despite agricultural hardships like those of WWII. Until this sake came along in the 1960's, all sake had distilled alcohol added to it due to rice shortages and war rationing. After the war, Chiyonosono crafted the first junmai sake (brewed without distilled alcohol nor additives of any kind) and celebrated by sharing it from a large, red lacquered sake cup called a Shuhai. Soft, aromas of orange blossom, straightforward. Try this sake with salty, savory foods. Green Mamba Maki or Yaki Udon.

Bright and refreshing, this sake is the perfect choice for daytime drinking and is the brewery employees' drink of choice. The juniper botanicals and cucumber notes make it the perfect gin lover's sake. It is named after the brewery founder who fought many battles near the ruins of Takatenjin Castle. It is very close to being a Ginjo but reined in by flavors and aromas to allow more easy drinking. Melon, pear aromas, subtle, sweet butter-tinged flavor. Local, all-natural aodani plums are soaked in Tozai sake for over three months resulting in an incredibly balanced sake with tart, juicy acidity on the finish. Plum blossoms are known as "The Flowers of Peace" in Japan and symbolize growth, renewal, and awakening. Plum, almond and apricot aromas, slightly sweet, mouth-watering finish.

"Nanbu Bijin" means "Southern Beauty" and is a Japanese term that celebrates the beauty of women, interpreted as the brewery's vision to create a delicate sophistication in its sake. The local Ginginga rice used for this sake took over eight years to develop and perfect. White wine aromatics of pear, grass, and muscat grape. Medium-bodied with slight wood spice and floral aromas that move toward apple and lively citrus notes. Mild acidity allows the minerality to exert itself on the finish. Drip-pressed in an ice igloo, this ultra-luxurious Junmai Daiginjo is extremely rare. Drip-pressing, or "shizuku" is a rarity by itself, and this is the only sake in the world drip-pressed in an ice igloo. Inside, the temperature remains about 28˚ F with 90% humidity. Bacteria cannot survive in these conditions, allowing the brewery to make the cleanest, most pure ultra-premium sake possible. Spice, minerality, and banana skin dominate the aroma profile. Lychee, melon, herbs, vanilla essence and concentrated mineral flavors keep the sake focused well into its long, clean, ethereal finish. Try it with caviar, crab, or slightly salty dishes. Ikura and Uni Nigiri, Kobe Maki and Soft Shell Crab Tempura.
Sugidama, Junmai Ginjo

The Sugidama, or Cedar Ball, is a tightly bound ball of green cedar boughs made at the beginning of each brewing season. The ball is hung in front of the brewery and when the green turns to brown the saké aging process is complete. This age old method of calculating aging saké aging time is used for aging this Junmai Ginjo saké providing authentic flavors and aromas that establish with the change of seasons. Medium dry, full-bodied, earthy. Pair with medium spicy dishes. Red Sun or Grilled Spicy Shiro Maguro.

Made with the heirloom rice, Kumamoto Shinriki which was revitalized after being out of use for 50-100 years. Chiyonosono is among the very few breweries who have revived rice strains after being out of use. Shinriki literally means "Sacred Power" in Japanese and represents the bold, briny ocean flavors present in the sake. This is a rich, full flavored sake with fresh-cut green grass aromas and hints of tropical fruits. The mouth feel is silky with suggestions of briny and umami flavors. It finishes with excellent acidity. Pair with fresh oysters or calamari. Fresh Kumoto Oysters and Ika Batayaki.
Rhythm of the Centuries, Kimoto Junmai

Made using the 17th-century time and labor intensive 'kimoto' method and then aged four years in bottle resulting in rich, earthy, and wild aromas and flavors. This brewing method of mixing the yeast starter has been perfected by Toji Yokomichi-san, who knows how to maximize the method. The extensive bottle aging rounds out the edges of the sake's flavor and creates overall smoothness. Notes of pickled mushroom and soy caramel give way to elegant notes of chamomile, bergamot, and walnut. A great sake to try warmed as well as slightly chilled. Pair with ahi tuna, roasted vegetables, and beef. Ahi and Avocado Salad, Beef Soba.
